What I Ate | vegan + gluten free

oatmeal with frozen blueberries, bananas, and agave

Awhile back, Aldi had huge bags of gluten free oats for around $4 so I grabbed three bags and have been having oatmeal almost every day since. This bowl had blueberries, bananas, cinnamon, and agave. I usually put walnuts on there too but am out at the moment :[

coffee and water

I had two cups of coffee throughout the day and a ton of water. We bought a Berkey water filter last summer and it has been so great because we all drink so much more water now for whatever reason.

I've been squeezing a lemon into a glass of water in the afternoon to have when I take my iron supplement. I read the citrus helps with iron absorption so I'm giving it a try!

I can't stop eating rice with sesame oil, sriracha, and gf soy sauce! It's so good! I love making a big batch of rice and everyone can add whatever they want to it. My daughter adds frozen corn and my husband will either use just soy sauce or he will have chili + rice.

I'll probably get tired of this soon since I've been having it so often, but it's perfect for right now.

curried lentil, tomato, and coconut soup

I made this curried lentil, tomato, and coconut soup early in the day so the flavors would have time to deepen before we had it for dinner buuuuut.. I couldn't resist and had two bowls of it before dinner even happened 😂 I've made this recipe quite a few times and it is so easy and so good. 

Some things I also ate but didn't take a photo of: an apple, a bowl of cantaloupe, and some plain wavy lay's potato chips.

I picked up a grocery order today and in it was plantains so that I can make these baked black bean + plantain rellenos this weekend! I'm excited to try these because they look really good!
